Dear Mom: A Mother's Day Diary, Part II

Dear Mom,



You made me. You nurtured me. I can't imagine what life would be like without you. Innately, you're motherly love is the first thing my heart reaches for when I am in need of care or help or empathy. Instinctively, you are the one that comes to mind when I have questions that I do not know the answers. I always think "Mom will know what is the best thing to do."





Though many times I have resisted your guidence, my heart and soul seem to whisper in the background of my conscience "listen to your mother - she is the one person that you know will always want what is best for you."





Now I am a mother to my own children and I am so sorry for all the worry, frustration and concern that I must have caused you to face year after year and issue after issue in my developing years. I roll my eyes when you sarcastically remind me "now it's your turn!" You tell me this as if you find great joy in knowing that I get to experience all the challenges of motherhood. The revenge is sweet for both of us, I suppose.





Here I am forty years old and I find myself making a conscience effort to be more independent of you and trying not to come to you with all my questions and conflicts. Meanwhile, here you are in your sixties and I see you letting go of me more and more each year - allowing me to form my own family dynamic, my own lifestyle....just looking on from a distance while you and dad enjoy the fruits of your years of labor.





My hope is that you are proud of who you nurtured me to be. I am so proud of you and the woman you are today. I want you to know that you are held in my heart and a part of my soul and definitely my conscience! Always.

Resolutions Abound!

Happy New Year!

As I write today, the first thing that comes to mind is all the people exercising, cleaning out closets, cutting back on the treats, tending to their yards and for the first time in months writing in their journals.

Right? Right!

Me too!

It is exciting to get started on the new year. Most of us are busy reassessing ourselves and the the new year ahead with the best intentions.

Then as the months drag on we find other things taking priority over going to the gym every night. Situations take place such as; there might be a really good movie on and our precious journal that we were so loyal to for the first six weeks suddenly gets tossed aside for "tomorrow." Before you know it the journal is obselete, the workouts are minimal (to say the least), all those nice, neat rows in your closet have become "abstract." :)

Well, for those of you that do NOT know the story behind the bee and why I chose my bee design to be a symbol of overcoming obstacles - now is a good time to share it!

Aerodynamically, a bee should not be able to fly. A bees body weighs eight times its wings size. Therefore, the bee defies the laws of gravity (physics). My bee, named "Buzz," is a reminder that YOU can DO ANYTHING that YOU set your mind too.

Keep Buzz in mind this year when you are trying to stay true to your goals and commitments! Better yet, wear Buzz around your wrist all the time to keep you in line!

Well, it is the time of year when Saint so gladly participates in the truly amazing Fall Open House at The Plaid Giraffe in Wichita, Kansas. Statement Ring

If I were to choose one piece of jewelry to invest in this fall it would have to be a statement ring. I realize that statement necklaces and bracelets are "oh so of the moment" for this fall season - but - I would put my money into a gorgeous over- sized ring. Be it in all metal or with a chunky gemstone, the statement ring is where my heart falls. I love the look of a big, obnoxiously loud ring on the hand. I think it looks fabulous to wear an amazing statement ring with absolutely no other jewelry - to me that is a very bold and strong fashion look. However it is fun to be more artsy and combine that chunky ring with a bunch of bracelets or a strong looking necklace. Which ever way you choose, you can't go wrong with a statement ring. I think it is such a great purchase because it will almost always go well with jeans, cocktail, formal or career clothing. It is a wonderful signature item that people will relate to you. Chicken and Watercress Salad with Almonds and Feta

Here is a delicious salad that my Aunt Sharon made for us one afternoon. The recipe is from Bon Appetit Magazine, June 2009. I have made it a few times and each time it gets great results from family and friends. The dressing is light and wonderful.

Supermarket roast chicken can be easily dressed up, as in this lovely salad. Look for almond oil at some supermarkets and at specialty food stores.
Yield: Makes 4 servings

1/4 cup white basalmic vinegar
1 large shallot, chopped
3 tablespoons almond oil, walnut oil, or grapeseed oil
3 tablespoons grapeseed oil
3 large bunches watercress, thick stems trimmed
2 fully cooked chicken breast halves, meat torn into bite-size pieces
3/4 cup crumbled feta cheese
4 apricots, pitted, each half cut into wedges (or use peaches)
1/4 cup sliced almonds, toasted

Combine vinegar and shallot in medium bowl. Whisk in both oils. Season dressing to taste with salt and pepper.

Place watercress, chicken, cheese, and apricots in large bowl. Add dressing; toss. Divide salad among four plates Sprinkle each with almonds.
